We are making a unique steak exclusively known in Japan, Chaliapin Steak. The dish uses lots of onion and was originally devised to make the meat extra tender and delicious. The thoroughly sauted onion goes great with this steak.
Cover the sirloin or rump steak with plastic wrap. And pound the meat with a rolling pin until the thickness reaches about 8mm (0.3”).
Remove the plastic wrap and gently pound it with a meat tenderizer or the back of a knife. If the meat is tough, pound it a little strong using the coarse face of the head. Flip it over. Repeat the process on the other side of the meat. Alternatively, you can use beef round or tenderloin.
Make numerous cuts along the steak, making a 5mm (0.2”) grid pattern. Flip it over. And make a grid pattern again but be careful not to separate the steak.
Distribute half the grated onion onto a tray. And place the meat onto it. Cover the top with the rest of the onion. The enzymes in the onion will break down the proteins, making the meat extra tender.
Cover the tray with plastic wrap and let it sit in a relatively cool place for 30 minutes to 1 hour. Placing it in the refrigerator will make the enzymes work slower so it will need to sit longer. In this case, remove the meat at lease 30 minutes before cooking to bring it to room temperature.
Let’s saute the onion. Drop in the butter and coat the pan with it. Then, add the chopped onion. Saute on hight heat.
When the onion begins to slightly brown, reduce the heat to low. Then, season it with salt and pepper. Continue sauteing until browned as shown. Remove and save the onion on a tray.
Let’s cook the steak. Scrape off the grated onion from both sides. The enzymes will not work when cooked so make sure to use raw onion. Then, lightly remove the excess liquid with a paper towel. Season the top side with salt and pepper.
Turn on the burner. Add the olive oil to a pan. Place the steak into the heated pan with the seasoned side facing down. Then, sprinkle on salt and pepper. Cook on medium heat.
This steak is relatively thin so flip it over when the other side is golden brown. Shake the pan or gently press the meat with tongs to help it brown evenly.
Now, both sides are deliciously browned. Remove and place the steak onto a plate.
Place the sauteed onion into the pan. Reheat the pan and coat the onion with the remaining beef juice. Finally, drop 1 teaspoon of soy sauce directly on the pan and toss to coat, bringing out the savory aroma.
Remove and place the onion onto the steak. And distribute the onion. Then, make a grid pattern on top. Finally, sprinkle on the parsley leaves.
This dish was devised by the chef at the Imperial Hotel, Tokyo in 1936 when a Russian opera singer Feodor Chaliapin requested an extra tender steak.
Adding the right amount of salt is very important since it will not only season the meat but also bring out the savory flavor.
You can also use lettuce leaves, baby salad greens, boiled carrot, asparagus, string bean pods or snap bean pods as side vegetable.
We are making Ratatouille with fresh summer vegetables and diced tomatoes. This is a quick balanced meal for those busy mornings. The vegetables are so delicious even though they are only seasoned with salt and pepper.
Ratatouille and Toasted Breakfast Ratatouille Recipe
Let's prepare the vegetables. Halve the eggplant lengthwise and trim off the stem end. Slice it into 1.5cm (0.6") pieces. Place the eggplant into a bowl. Lightly salt and toss to coat. Then, let it sit for about 10 minutes.
Halve the red bell pepper lengthwise and remove the stem end and seeds. Slice the pepper into 1.5cm (0.6") pieces. Then, cut them into smaller pieces.
This is kabocha squash also known as Japanese pumpkin. Slice the kabocha into 1cm (0.4") slices and then cut them into 2cm (0.8") pieces.
Now, place the eggplant onto a paper towel. Gently press the eggplant with another paper towel to remove the excess liquid. This will help to remove any bitter flavor.
As for the onion, yellow and green bell peppers and zucchini, cut them into 1.5cm (0.6") pieces as well.
Let's make the ratatouille. Place the crushed garlic clove into a pan and add the olive oil. Turn on the burner and heat it on low heat. You can tilt the pan to help the garlic submerge in the oil.
When the garlic clove is slightly browned and the aroma grows stranger, add the chopped onion. Occasionally swirl the pan and lightly cook the onion.
Add the red and yellow bell peppers. We will add the green bell pepper later to keep it from discoloring. Add salt and pepper. Continue to stir-fry.
Add the eggplant and zucchini. Continue to stir-fry and coat the vegetables with the oil evenly. Lightly season them with salt and pepper again.
Add the green bell pepper and kabocha squash. Lightly saute the vegetables. When the oil is distributed evenly, season with salt and pepper.
Add the packaged diced tomatoes. Put in the bay leaf and fresh thyme leaves. Gently press the diced tomatoes into the vegetables.
Cover with a lid and reduce the heat to low. Cook for about 10 minutes until the kabocha squash softens, but we recommend checking inside halfway through to avoid burning.
Lightly salting each time you add vegetables will help to extract the water from the vegetables. This will enable you to cook the dish without adding any water. The kabocha squash we used is relatively sweet and it will soften the sourness of the tomato, making the dish more delicious.
Test the flavor of the dish and season it with salt and pepper to taste. If the tomato is too sour, add a small amount of sugar or honey to give it a milder flavor. Looks so delicious!
Toasted Breakfast Ratatouille
We will be introducing a perfect breakfast recipe using this ratatouille. Place the ratatouille in a gratin dish and arrange the sausage and egg on top. Sprinkle on the Parmesan cheese and chopped parsley leaves.
Bake the ratatouille at about 200°C (390°F) until the surface is deliciously browned. The extra-toppings add bulk making this a substantial breakfast. Both children and adults will enjoy this dish.
Cooking with no added water will help you fully enjoy the vegetables' own flavors. This is a perfect dish for people who love vegetables.
The piping hot ratatouille is delicious but you can also chill it in the fridge and enjoy the dish cold.
Let’s make the roux. Drop the butter in the pan over low heat. Let the butter melt in the pan. Add the sieved flour to the melted butter. Stir-fry the flour thoroughly with a wooden paddle. Be careful not to burn the mixture.
Stir continuously for more than 10 minutes to brown the mixture. When it becomes brown as shown, turn off the burner and place the pan on a trivet.
Dilute the mixture by adding one third of the bouillon broth.
Continue mixing vigorously, gather and place the roux on a plate.
Let’s cut the vegetables. Cut the onion in half. Remove the basal plate, the part of the root attached to the onion. Make a shallow cut vertically along the outer layers. This will help cut the onion into even pieces. Slice the onion across the shallow cut, making half inch slices.
Cut the carrot vertically into 4 slices. Stack the slices on top of each other and chop them into fine strips. Slice the button mushrooms into thin slices.
Let's make the hayashi sauce, similar to a thick demi-glace sauce. Lightly sprinkle the beef slices with the salt and the pepper.
Add the vegetable oil to the heated pan and swirl to coat it with the oil. With a pair of tongs, spread the beef slices on the pan with the seasoned side facing down. Sprinkle the pepper and the salt on the other side of the beef.
Let the beef cook on high heat without stirring until brown and then turn them over. When both sides become brown, place the beef on a plate and turn off the burner.
Tilt the pan toward you and remove the excess oil with a paper towel. Add the butter and olive oil to the pan and turn the heat to medium. Swirl the pan and let the butter melt. Put the chopped onion and carrot in the pan at once.
As with the beef, don’t overstir while browning the vegetables. Cooking thoroughly at this stage increases the flavor of the vegetables and shortens the cooking time. Add the chopped garlic clove and stir lightly.
When the aroma grows stronger, add the sliced button mushrooms and mix. When the mushrooms begins to wilt, add the tomato ketchup and toss to coat.
When the vegetables are well coated, place the beef slices back into the pan and distribute evenly among the vegetables. Add the red wine to the beef and vegetables and reduce the liquid on medium heat.
When the alcohol has evaporated completely, add the rest of the bouillon broth, canned diced tomatoes, honey and bay leaf to the sauce. Turn the burner on high and lightly stir with a ladle.
Skim off the foam with a mesh strainer. Reduce the heat, cover with a lid and simmer on low heat for 5 to 6 minutes.
Remove the lid. Drop in the roux and dissolve it in the sauce with the ladle.
Add the green peas, salt and Japanese Worcestershire sauce to the mixture. Japanese Worcestershire sauce is much different than other brands so if it is unavailable in your area this ingredient is not essential. While occasionally stirring with the ladle, reduce the sauce on low heat until thickened as shown.
Test the flavor of the sauce and add salt and pepper to taste.
Add the soy sauce, lightly stir and the hayashi sauce is ready to serve.
Let’s serve the Hayashi Rice. Open the rice cooker and add the butter to the fresh steamed rice. Lightly stir with a rice paddle. When combined, stuff the rice into a cup. Serve the rice on a plate.
Ladle the hayashi sauce and the beef and vegetables beside the rice. Sprinkle on the chopped parsley. Finally, pour a dash of whipping cream onto the hayashi sauce.
When you make the roux, it becomes very hot so we recommend using a wooden paddle to mix it.
This homemade sauce is smooth and delicious and there is no need to purchase packaged demi-glace.
Except for carefully making the roux, this is a simple recipe requiring only to combine the ingredients in order.
We are making soft-cooked Omurice where the top is covered with the egg instead of being wrapped completely. The combination of the soft-cooked egg and the thoroughly stir-fried rice is very delicious!
Let’s make the omurice sauce. Using a hand blender, make the tomato sauce smooth.
Pour the sauce into a small pot and turn on the burner. Heat the sauce while stirring. Then, add a splash of soy sauce. This will bring out the flavor and give the sauce a touch of Japanese style. This simple sauce goes great with omurice.
Let’s make the chicken rice. Lightly season the chicken pieces with salt and pepper. Then, toss to coat. Heat a pan and add the vegetable oil. Add the coarsely chopped onion and the mixed vegetables. Saute the vegetables for about 1 to 2 minutes.
When the pungent taste of the onion disappears and it starts to grow more fragrant, add the chicken pieces. Continue sauteing.
When the chicken is almost cooked, add the button mushrooms.
When the mushrooms are coated with oil, add the white wine and stir. Then, add the ketchup. Distribute the ketchup and allow the excess water to evaporate. A tip to making this dish delicious is to reduce the moisture of ketchup here.
Add the hot steamed rice. Coat the rice with the sauce but be careful not to crush the grains.
Season with salt and pepper. Stir to combine. Place the chicken rice onto a plate.
Let’s make the soft-cooked omurice. Break up the egg white with chopsticks and then lightly beat the eggs. Avoid over-beating the egg to give it a pleasant texture. Add the milk, salt and pepper.
Heat a pan and add the butter. Melt the butter and distribute it on the pan.
Lightly stir the egg mixture and quickly pour it into the pan.
When the edges begin to firm up, keep moving them to the center of the pan to give the egg an even silky texture. Keep watching the consistency of the egg and remove the pan from the burner to adjust the heat. Cook the egg halfway through and now it is ready.
Gently place the egg onto the chicken rice.
Pour on the tomato sauce. Finally, sprinkle on the chopped parsley leaves.
Bacon, ham or sausage can be also used instead of the chicken pieces.
The tomato sauce is easy to make and it is full of savory tomato flavor.

We are making hearty Japanese-style Scotch Eggs, in which half boiled eggs are wrapped in ground meat, breaded and deep-fried. The combination of the crispy outside and the gooey inside is so delicious. These are great for Christmas dinner. You should definitely try it out.
Let’s make the half boiled eggs. Reduce the heat to low and carefully place 2 eggs into a pot of boiling water. During the first 2 minutes, gently rotate the eggs to help the yolks to stay in the center. Boil the eggs for a total of five and a half minutes.
Place the eggs into a bowl of ice water. Remove the shells in the water. The eggs are soft and delicate so be careful not to break them.
Look at that! The soft-boiled eggs have a jello-like texture!
Let’s make the scotch eggs. Add the breadcrumbs to the beaten egg and stir to moisten.
For the batter, combine another beaten egg and the flour in a bowl. Stir to mix. Add a small amount of water until the batter has the desired consistency like shown.
Place the mixture of ground beef and pork in a bowl and sprinkle on the salt and the coarsely ground black pepper. Add the Japanese Worcester sauce or regular Worcester sauce and the tomato ketchup.
Combine all the ingredients with your hand. Make sure to thoroughly mix the meat until it becomes kind of gooey.
Add the egg-moistened bread crumbs and the chopped cabbage leaves.
Combine the ingredients again. Take half of the meat in your hand.
Toss it from one hand to the other to remove the air inside. Then, flatten the meat.
Dust the boiled egg with flour and wrap the egg with the meat. The flour between the egg and the meat will help to attach them firmly together. Make the thickness of the meat even and shape the scotch egg into a ball.
Coat the meat with the batter.
Coat it with the bread crumbs. Repeat the procedure and you’ll have 2 large scotch eggs.
Let’s deep-fry the scotch eggs. Heat the oil to 170°C (338°F) in a pot. Adjust the shape and place each scotch egg into the oil.
Don’t touch them until the batter firms up otherwise the outer layer will break apart. Then, with kitchen chopsticks, gently rotate the pieces to brown evenly. Deep-fry for about 5 and a half minutes until golden brown.
Remove and drain the excess oil.
Place the scotch egg onto a plate along with the salad. Enjoy the dish with mustard or you can add your favorite sauce to taste.
Scotch eggs are an English dish and authentic recipes use a hard boiled egg and sausage meat. This version is inspired by a Japanese dish called Menchikatsu, a breaded and deep-fried ground meat.
Thoroughly mixing the meat and removing the air inside will help prevent the meat from cracking while deep-frying.
The meat is well seasoned in this recipe so you should be able to enjoy it with only mustard.
To make the nanban sauce, combine the sugar, soy sauce and the vinegar. Adding the dried red chili pepper will give the sauce a little bit of kick. Make sure to dissolve the sugar thoroughly.
Let’s make the tartar sauce. Add the salt to the chopped onion and rub it in. Rinse the onion and thoroughly squeeze out the excess water using a paper towel. Add it to the mayonnaise in a bowl.
Using an egg slicer, cut half of the boiled egg into fine pieces.
Add the egg to the mayonnaise. Add the chopped pickle to the mixture.
Mix it with a spatula and then pour in the milk. Season with the salt and the pepper. Combine the tartar sauce evenly.
Let’s prepare the chicken breast. Peel the skin off the chicken.
Using kitchen shears will help to remove the skin. Trim off the excess fat. Remove the excess moisture thoroughly with a paper towel.
Slice off the thin part of the chicken. Then, slice the rest of the chicken into 5 pieces, cutting at an angle. Make sure that each piece has about the same thickness.
In a cooking tray, sprinkle the salt and the pepper. Place the chicken pieces into it. Sprinkle on the salt and the pepper again. Pour the sake over the chicken. Flip the pieces over and allow the chicken to absorb the sake.
Place the all-purpose flour and the chicken into a plastic bag. Shake the bag to coat the chicken with the flour evenly.
Dip the chicken into the beaten egg. Coat the pieces with the egg evenly.
Heat the vegetable oil to about 170 °C (340 °F) and gently place the chicken into it. Let the chicken sit until the outside firms up. Then, flip the pieces over.
When the surface becomes golden brown, drain the oil thoroughly and place the pieces into the nanban sauce. Flip the chicken over and coat both sides with the sauce.
Place the chicken onto a plate along with the side vegetables. Spoon a generous amount of the tartar sauce onto the chicken. Then, top with the shredded parsley leaves.
Chicken breasts are often used in this recipe but you can also use chicken thighs.
The deep-fried batter absorbs the nanban sauce, making the dish more delicious.
You can pour the remaining nanban sauce over the side vegetables.
Let's make tartar sauce. Slice the hard-boiled egg crosswise with an egg slicer. Remove and slice it lengthwise across the initial slices. Rotate it by 90 degrees and slice it lengthwise again. Put the finely chopped boiled egg into a bowl.
Slice the onion, stack the slices on top of each other and mince well. Put the chopped onion in another bowl and rub with a bit of salt. Rinse the onion with cold water and drain with a mesh strainer. Squeeze out the water, put them on a paper towel and remove the excess moisture. Add the onion to the chopped egg.
Pinch the parsley, chop into fine pieces and add it to the egg. Slice the pickled cucumber, stack them on top of each other and chop into fine pieces. Add it to the egg mixture. Add the mayonnaise and salt to the mixture.
Cut the lemon in half. Slice the lemon half into wedges. Squeeze the other half and add the lemon juice to the mixture. Mix evenly and the tartar sauce is ready to serve.
Let's prepare the side vegetables. Use a vegetable slicer and shred the cabbage into ice water. Let it sit in the water for 2 to 3 minutes. Drain the cabbage shreds with a salad spinner. Serve it on a plate. Garnish with the parsley, small tomamos and lemon wedges. Put the tartar sauce in a small cup and place it on the plate.
Let's prepare the black tiger prawns. Remove the sharp pointed shell from the tails. Peel the prawns but leave the last sections of the shell above the tails. Pierce the back of the prawns with a bamboo skewer and remove the sand veins.
Put the prawns in a bowl. Add a pinch of salt, potato starch and a little water to it. Gently rub the prawns with the salt and starch. Take the bowl to the sink and rinse them with running water to remove the dirt and fishy smell.
Place the prawns on a paper towel. Cover with another paper towel and press them to remove the excess moisture.
Cut the tips off the tails with a kitchen shears and remove the moist inside. Make cuts diagonally along the prawn stomachs. Press the prawns on their back and break the stringy parts. This process will prevent the prawns from curling up when heated. Finally, lightly sprinkle on salt.
Let's coat the prawns with batter. Crack the egg into a bowl. Add some water and beat the egg thoroughly with a whisk. First, dip the prawns into flour. Lightly coat and dust off the excess flour.
Second, dip them into the beaten egg.
Finally, coat the prawns with moist breadcrumbs. If they appear patchy, dip them into the egg again and reapply the breadcrumbs.
Let's deep-fry the prawns. Drop the breadcrumbs in the heated oil to check the oil temperature is around 175 °C (347 °F). Less than 2cm (0.8") depth of frying oil is good enough for this recipe. Dust off the breadcrumbs from the tails. Hold the prawn tails and gently put them into the oil one by one.
Let the prawns sit still in the oil for few seconds. Flip them over as the surface gets crispy. When the surface gets golden brown, place them on a paper towel and let them drain out the excess oil.
Serve the ebi fry on the plate along with the side vegetables and tartar sauce.
If the soft breadcrumbs are not available, mist dried breadcrumbs with water so that the ebi fry become crispy.
This tartar sauce uses less amount of mayonnaise. Adding extra mayo or a bit of mustard to the sauce also brings out the flavor.
