  • 10 g Unsalted Butter
  • 40 g Granulated Sugar
  • 1/2 tsp Rum
  • 1/2 tsp Vanilla Extract
  • 2 tbsp Heavy Cream 36% fat
  • Milk to adjust the consistency, optional

  • 4 slices Swiss Roll packaged, 5cm/2” diameter, 3cm/1.2” thick, or sponge cake
  • 1 tbsp Syrup substitute with syrup from the chestnut kanroni
  • 1/2 tsp Rum
  • 70 ml Heavy Cream 36% fat
  • 1 tsp Granulated Sugar
  • 4 pieces Chestnut Kanroni chestnuts simmered in syrup
  • Powdered Sugar optional

Recipe Notes

Removing the stringy fibers from the sweet potato will give the cream an exquisite, smooth texture so don't forget/skip this step.
If the sweet potato cream is too soft, chill it in the fridge to get a desired consistency. Conversely, if it is too firm, dilute it with milk or heavy cream.
