Ingredients
Cleaning Prawns
  • 12 Prawns 12 black tiger prawns: 280g/9.9 oz
  • 1/2 tsp Salt
  • 1 tbsp Potato Starch
  • A sprinkle of Water
Seasoning for Prawns
  • 1/8 tsp Salt
  • A sprinkle of Pepper
  • 1 tsp Sake
  • 1 tbsp Egg Whites
  • 1 tbsp Potato Starch
Chili Sauce
  • 1 tbsp Vegetable Oil
  • 1 1/2 tbsp Ginger Root chopped
  • 1 1/2 tbsp Garlic Cloves chopped
  • 1-1 1/2 tsp Doubanjiang chili bean paste
  • 2 tbsp Tomato Ketchup
  • 100 ml Chicken Stock Chinese-style, follow the directions on the package of chicken stock powder
  • 1 tbsp Sake
  • 1/4 tsp Salt
  • 2 tsp Sugar
  • 1/2 Long Green Onion (Naganegi)
  • 1 tbsp Potato Starch
  • 2 tbsp Water
  • 1/2 tsp Vinegar
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

Recipe Notes

Do not overcook the prawns otherwise they will become small and tough and the texture will not be enjoyable.
Using plenty of aromatic vegetables, such as garlic, ginger and long green onions will increase the flavor.
