First, let’s make the teriyaki sauce. Combine the soy sauce, sake, mirin, sugar and the grated garlic. Stir to dissolve well.
Next, trim off the excess fat of the chicken thigh.
Make numerous shallow cuts along the thick part.
Then, cut the chicken into 4 pieces.
Now, heat a pan and add vegetable oil. Place the chicken pieces into the pan with the skin-side facing down.
Saute the chicken on medium heat. When the skin turns golden brown, flip the pieces over.
Lightly saute the other sides.
Turn off the burner. Remove the excess oil with a paper towel. Make sure to turn off the heat otherwise the hot pan will easily burn the sauce later.
Now, pour in the teriyaki sauce and distribute it in the pan. Turn on the burner again.
Reduce the sauce.
Flip the chicken over and coat the pieces with the teriyaki sauce.
Then, place the chicken onto a plate.
Now, let’s make the sandwich. Season the chicken with shichimi, seven flavor chili powder.
This is pain de campagne, country bread in French but you can use your favorite bread. Place the lettuce leaves onto the bread.
Spread on the mayonnaise.
Add the sliced new onion, which doesn’t have a pungent taste.
And now for the teriyaki chicken!
Finally, pour on the remaining teriyaki sauce.
Place the sandwich on a plate and enjoy!
