Easy Potato Salad Recipe (Creamy Potato Salad with Egg and Mayonnaise)

Everybody likes Potato Salad, which is sold in almost every grocery store in Japan. We are making this well-known dish, a creamy and delicious potato salad. The cucumber and the onion are fresh and crispy!

Ingredients
  • 200g Potatoescut into bite-size pieces
  • 50g Carrots4mm thick quarter moons
  • 1/4tsp Salt
  • 2pinches Sugar
  • 1/2tsp Vinegar
  • White Pepper
  • 1/2 Cucumber70g/2.5 oz for 3 people
  • 30g Ham5mm thick
  • 50g Onions
  • 1 Boiled Egg
  • 2tbsp Mayonnaise
  • White Pepper
  • Salt
Instructions
  1. First, place the potato pieces and the sliced carrot into a pot of a large amount of water. Add the salt.
  2. Cover, turn on the burner and bring it to a boil.
  3. Boil the potato until it softens.
  4. Now, strain the potato with a mesh strainer.
  5. Place it into the pot again. Shake the pot over the heat, removing the excess water.
  6. Continue shaking until the surface of the potato turns powdery.
  7. Now, place the potato and the carrot into a bowl. Add the salt, 2 pinches of sugar and the vinegar.
  8. Sprinkle on the pepper and toss to coat. Seasoning the vegetables when still hot will help them to absorb the flavor. Then, let it sit to cool.
  9. Now, slice the cucumber with a slicer. Add the salt and distribute evenly.
  10. Add the ham to the bowl of the potato.
  11. Thinly slice the onion along the grain. Sprinkle on the salt and toss to coat.
  12. Wrap the onion with cheesecloth or a clean dish cloth.
  13. Rub and rinse it in a bowl of water. Then, squeeze out the water thoroughly. This will help to remove the pungent taste of the onion.
  14. Place the onion into the bowl.
  15. Squeeze out the excess liquid from the cucumber. Then, add the cucumber to the bowl.
  16. Now, add the mayonnaise and sprinkle on the pepper again. Distribute the condiments evenly.
  17. Finally, roughly chop the boiled egg.
  18. Add the egg to the bowl.
  19. Lightly mix the ingredients.
  20. Now, it is ready to serve. Place the potato salad into a bowl.
Recipe Notes
  • You can place the potato salad on a slice of bread and enjoy it as an open sandwich or use it as a filling for regular sandwiches.
  • Adding corn or green peas will also make the dish visually appealing.
  • This recipe is a perfect side-dish for your Christmas dinner.
